Hi everyone, a bit of a different post for you today, my super easy pesto recipe. I really like making my own pesto as I find it more refreshing and not as heavy as jars of pesto. I also try and make it a bit healthier than pre made pesto with a little bit less oil and I make it completely plant based. I just wanted to share this recipe because I really love it and I hope you will like it too. Jasper also really likes when I mash up the meal pictured below, which I find a bit odd as i thought pesto might be quite a strong flavour for a baby!

So to make this pesto (approximately 6 portions) you will need:
- 2 handfuls of fresh basil (I use scissors to cut the leaves of the plant because I think it helps with regrowth)
- 40ml olive oil (I also think flax/linseed oil works quite well too)
- 130ml water
- 20g pine nuts
- 1 large garlic clove
- 2tbsp nutritional yeast (this is optional – it makes the pesto taste more cheesy and its loaded with great vitamins and minerals but it is a bit of an unusual ingredient)

Then simply load all of the ingredients in to a blender, I use my NutriBullet, and blend until smooth.
I like to serve the pesto over a pasta, my favourite is red lentil pasta, with broccoli and peas and sometimes kidney beans as pictured above.
